Bitter gourd, commonly known as Karela has culinary uses in India and also in the other South Asian countries. Children are often reluctant about taking this veggie mainly due to its bitter taste.

 

Even many adults are repelled by the very thought of bitter gourd and again, its bitterness is the culprit. However, this particular veggie has immense therapeutic value mainly for patients of diabetes. Also, Karela is known for its immune boosting & fat shedding properties.

 

If you are someone who desperately wants your family to fall in love with bitter gourd and have tried out all other bitter gourd recipes like bitter gourd chips, fried bitter gourd, stuffed bitter gourd (bharwan karela) but failed, this one unique recipe will surely let the veggie win a place in everybody’s heart. Try the Karela bhurji and get lost in a taste that’s party tangy and partly spicy. The dish is absolutely flavourful and never bitter!

 

Ingredients:

  • Bitter gourd (4)
  • Chopped Onion (2)
  • Green chilly (1)
  • Chopped Tomatoes (2)
  • Ginger-Garlic Paste (1 tbsp)
  • Cumin Seeds (1/2 tsp)
  • Turmeric powder (1 tsp)
  • Red chilli powder (1 tsp)
  • Asafoetida (a pinch)
  • Coriander Powder (1 tsp)
  • Lemon juice (1 tsp)
  • Salt to taste
  • Chopped coriander leaves (for garnishing)

 

How to prepare

  • Wash bitter gourd thoroughly and dry them out. Finely chop the bitter gourd, add ½ tsp salt to it and mix well generously. Set aside for about 10 minutes. This helps in reducing the bitterness of the veggie.
  • Heat oil in a skillet, add cumin seeds & asafoetida. Once the cumin seeds start spluttering add the chopped green chillies, chopped onion and the ginger-garlic paste. Sauté until the onions become translucent.
  • Add the grated bitter gourd and sauté for another 5 minutes
  • Add the tomatoes, spice powders & salt to taste.
  • Mix, sprinkle some water & cover and cook for another
  • Drizzle lemon juice over the top of the preparation and garnish with chopped coriander leaves.
  • Your Karela Bhurji is ready to be served!
