Ingredients

  • Ragi flour (1 cup)
  • Chopped Drumstick leaves (1 cup)
  • Chopped Onion (1 onion)
  • Chopped Green Chilies (3 chilies)
  • Cumin seeds (1 tsp)
  • Sunflower Oil (1 tbsp)
  • Salt to taste
  • Lukewarm water

Cooking Method

  1. Clean as well as chop the drumstick leaves
  2. Heat oil in a pan and add the cumin seeds and sauté. Add chopped onion and green chilies. Sauté again and next add the chopped drumstick leaves.
  3. Sauté the leaves well and make sure they are well cooked. Once done, turn the heat off and allow the mix to cool down.
  4. Meanwhile, place the saucepan on the heat and next add two cups of water to the saucepan. Let the water come to a boil and next add a pinch of salt.
  5. Add 1 cup of ragi flour into the saucepan and next add the cooked drumstick leaves. Stir with a spatula until the flour absorbs the water and can be kneaded into a sticky, smooth dough.
  6. Heat a Tawa on medium flame.
  7. Make a ball from the kneaded dough. Flatten the flour ball on a banana leaf to give it the size you want. Gently lift the leaf and put it on the hot Tawa, and gradually peel the leaf away from the flattened adai. Let adai cook on its one side completely. Then flip the adai to another side and cook. Drizzle oil on either side and let it cook evenly.
  8. Serve the cooked, crispy adai fuming hot.
