All you need is a little preparation beforehand to get started.
This recipe for Poha Croquettes with Vegetables, Pressed Rice and Breadcrumbs from Chef Sanjeev Kapoor is a must.
"Imagine your breakfast game with these weird Poha croquettes," wrote the chef on Instagram.
1½ cups - Pressed rice (Poha)
2 - Medium potatoes, boiled, peeled and grated
1 - Medium onion, finely chopped
½ cup - Peas, blanched
1 tsp - Curry leaves, grated
2 - Green chili peppers, finely chopped
1 tsp - mustard seeds
1 tbsp - fresh coriander leaves, finely chopped
½ tsp - red chili powder
¼ tsp - turmeric powder
salt to taste
fine flour paste (Maida) as needed
dry breadcrumbs for brushing
oil for frying
method
* Soak the pressed rice in a little water and allow to drain.
* Mix the potatoes, onions, peas, curry leaves, green chilies, mustard seeds, coriander leaves, chilli powder, turmeric powder, salt and pressed rice in a bowl .
* Divide the mixture into equal portions and form croquettes.
* Heat enough oil in a kadai. Fry the croquettes until golden brown. Drain on absorbent paper.
* Serve hot with green chutney.
